One recipe uses gelatin as binder, the second uses coconut cream and the third utilizes rice wine vinegar with lower-glycemic coconut sugar. The recipe you like best will depend on your taste and fat/carb preferences.

For example, the coconut cream will add a significant amount of fat to the rice. Plus, it gives it a nice coconut flavor that works well in stir fry or curry dishes – but maybe not so much for sushi.

Sticky Cauliflower Rice with Curry and VegetablesOn the other hand, the recipe including coconut sugar will taste more like traditional sushi rice. However, it will have more carbohydrates and a higher glycemic load. (Keep in mind that this is still a low-carb option because you are not using white rice.)

Gelatin does not add any flavor, fat or sugar. Therefore, it is best combined with highly flavorful foods. For example, a rich curry dish or a sushi roll with spicy fish, soy sauce or wasabi.

#1. The Simplest Cauliflower Sushi Rice

1 tbsp rice wine vinegar
1 tsp sugar (substitute coconut sugar or stevia)

#2. Grain-Free Paleo Sushi Rice

With this second low-carb recipe for sticky cauliflower rice (from the Castaway Kitchen), you simply stir everything together in a large pot. When the liquid has evaporated, turn the heat off and let the mixture cool. As the rice cools, it becomes more and more sticky.

1 large head cauliflower (about 5 cups riced)
3 tbsp coconut oil or other fat
2 tbsp apple cider vinegar
1 tsp salt
2/3 cup full fat coconut milk
2 heaping tps Great Lakes Beef Gelatin

#3. Keto Coconut Cauliflower Rice

The third recipe comes from My Keto Kitchen. This 4-serving dish comes out to 7 carbs per serving (3 of which are from fiber).

Basically, you sauté the shredded coconut with the cauliflower in oil for 5 minutes. Then, cook it an additional 5-10 minutes with the coconut cream. That’s it!

3 tbsp of Coconut Oil
3 tbsp of Unsweetened Shredded Coconut
14 oz of Cauliflower Rice
4 oz of Coconut Cream
Pinch Salt

Bonus: Cream Cheese Sticky Cauliflower Rice

Similar to the recipe above, works well with stir fry vegetables, meats, etc.. In fact, in the video below, she cooks the vegetables right along with the riced cauliflower.



Alternatively, you can sauté the cream cheese with just the rice. Then, just let it cool before adding it to a sushi burrito or wrap.
