I’ve come across several recipes for cauliflower waffles, but many seem to contain some form of flour. If you are following a low carb, paleo or keto diet, most likely you don’t want flour in your waffles either.
Then, I found a no-flour cauliflower waffle recipe…
I also like these waffles because they contain very few ingredients. I don’t like to spend a lot of time prepping and cooking, so this is a great bonus!
Here are the Simple Ingredients for These Cauliflower Waffles:
1. 4 Ingredients
Basically, all you need is cauliflower rice (see how to make it yourself), 2 eggs, some cheddar cheese and bacon.
2. 4 Seasonings
Then, you just need seasonings: chives, onion powder, garlic powder and salt.
3. Toppings (Optional)
If you want additional toppings like sour cream, or guacamole keep that in mind too.
With the bacon and cheese, these low carb waffles make a tasty breakfast, lunch or dinner meal. In addition, you make extra for snacks at home or on-the-go. They have so much flavor you don’t even need any toppings. =)
Another Benefit to Using a Waffle Maker with Cauliflower Rice
Some “bread-like” dishes that use cauliflower rice as a substitute can get mushy with the extra water from the vegetable. Think pancakes, muffins, etc..
That’s why they often call for you to squeeze excess water out of the cauliflower before baking. I always think that is a pain in the butt and try to avoid doing it.
However, the waffle maker simply steams out the excess liquid while the waffles are baking. Genius! I don’t have to squeeze the water out – the waffle maker does it for me.
